The highlight of this week was the Halloween Party at the karate place. There was lots of candy, fun and games. Kyriahna decided at the final moment she wouldn't actually dress up for this, she was the headless horseman. It was a crazy few hours getting ready, and I can't bear the thought of actually spending money on costumes, so this is how it went this year. I saved all their stuff, and we'll dress them up again next week for Halloween.

My favorite treat right now is some homemade caramel just perfect for dipping apples.
Caramel:
On medium heat, boil 1 cup brown sugar with 1 cup butter ( I used the fake stuff and it still was divine, can't imagine how good with the real stuff). When you bring it up to a boil, add 1 can of sweetened condensed milk and bring to a boil again. Cook for around 10 minutes, until about a softball stage. Remove from heat and cool, dip your apples and enjoy!
On Wednesday I went to Relief Society and we had a ton of recipes that used pumpkin and various squash. For those who are tired of large zucchini and feel like they have exhausted every probable recipe for them, this recipe is for you. It is so delicious and you will never believe that you made it with zucchini. That, by the way, is the secret ingredient, but for everyone who has family sick of the z squash, some refuse to try it because they know it's inside. Anyway, this recipe is especially for the extra large ones.
Super Cobbler
8 Cups peeled, seeded, diced, "secret ingredient" (peel, cut in half lengthwise and with a spoon scoop out all seeds and soft middles, chop the remainder)
2/3 Cup lemon juice
1 Cup sugar
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
Crust:
4 cups flour
2 cups sugar
1 1/2 cups cold butter
1 tsp. ground cinnamon
In a large saucepan, over medium-low heat, cook and stir secret ingredient and lemon juice for 15-20 minutes or until the secret ingredient is tender. Add sugar, cinnamon, and nutmeg; simmer 1 minute longer. Remove from heat and set aside.
For Crust:
Combine flour and sugar in a large bowl; cut in butter until mixture resembles course crumbs. (will still be quite crumby) Stir 1/2 cup of flour mixture into saucepan mixture
Press half of remaining crust mixture into a greased 15x10x1 inch baking pan. Spread with filling over top; crumble remaining crust mixture over filling. Sprinkle with cinnamon.
Bake at 375 degrees for 35-40 minutes or until golden and bubbly.
